Easy English Onion Soup

Easy English Onion Soup

This quick and easy onion soup is made with a Pale Ale, allowing for a harmony of hops and onions. This soup can be made a day or two in advance, which allows the flavors to more fully develop.

Ingredients:

  • 2 tablespoons butter
  • 2 large yellow onions (about 1 1/4 pounds), cut 1/4-inch-thick slices
  • 1 pint Pale Ale
  • 4 cups beef broth or stock
  • 1-2 sprigs fresh thyme
  • 1 bay leaf
  • Ground black pepper
  • Kosher salt
  • optional - 1 Tbsp beef base (enhances the beef flavor)

Process:

  1. Melt butter in a stockpot over medium heat. Add onions, sauté until just lightly browned.
  2. Deglaze with ale. Add remaining ingredients. Simmer, covered, for 5-10 minutes. Salt and pepper to taste.

Serve with croutons and a good Stilton, Cheddar or other English cheese.
